Mexican for Supper


Over 2 years ago we found ourselves in Connecticut visiting a supporting church.  The pastor's wife, Kathy Rizzuti made an awesome casserole that night.  Here the Mexican missionary was getting a Mexican recipe from a lady in New England.  The kids loved it and have begged for it recently.  We will be having it tonight as tonight is James's last night with us until spring semester is over in Florida.  I wanted to share it with you so you could delight your family.  The recipe reminds me of a Mexican Lasagna without the noodles of course.  It is not spicy for those who can't handle hot things.  I also like to top it with shredded lettuce, a slice of tomato, sour cream,  and for those who need a little bit of a bite, pico de gallo.

 Mexican Casserole
1 lb ground beef cooked and drained
1 can refried beans
8 tortillas (fajita style)
1can cream mushroom soup
1 can cream chicken soup
1 can chili without beans (Hormel)
4 oz taco sauce
1/2 cup milk
Mexican cheese

Add refried beans to cooked hamburger mix (I use extra beans 2 cans instead of 1), fill tortillas shells, roll up.   Mix remaining ingredients except cheese in bowl. Put a little sauce on bottom of 13x9 pan layer tortilla's then sauce, cheese, and tortillas then sauce and cheese-bake 350 30 min or till heated through. Serve with sour cream.

  2. Sounds soooo yummy! Too bad we can't get most of those ingredients here in Ukraine where we are missionaries. That is just one of those things that makes furlough so much sweeter though... enjoying all of those yummy foods that we miss! :-) (By the way, we apparently don't suffer too much here either, 'cause I don't see anyone in our family having trouble keeping their weight on! HA!)

  3. Crazy thing about this post was that...Victoria and Eva ended up cooking it because when I came home from the buying the ingredients - I was sick with the flu!!! It was delicious though! For our size of family, I doubled the recipe!
